Easy Maui Ribs with Garlic Scalloped Potatoes

Fast-cooking Maui Ribs with Grilled Pineapple

Ingredients:

  • 6 - 8 Red Potatoes
  • 5 Garlic Cloves
  • 4 - 6 Pineapple Rings
  • 2 Tsp Butter or Margarine
  • Splash of Milk
  • 1/4 Cup Cheese (Optional)
  • Salt & Pepper to taste
  • BBQ Sauce or marinate ahead of time
  • Pairs great with Caesar Salad

    Start by prepping the Scalloped potatoes. Red potatoes are great for this, as they tend to have a nice moisture content. Slice them thinly (about a 1/4 inch thick or less). Use oven safe cookware that's not too big. You ideally want about 4 layers of potato slices. The thicker the layers, the longer the cook time.

    Line the bottom with potato slices and sprinkle salt and pepper over top. Peel and Cut the garlic cloves in half and use 3 - 4 halves spread throughout the bottom layer. Continue with layer 2, add salt & pepper, add a couple garlic cloves. Same for the 3rd layer. Make sure to stagger your slices on top of each other so that they have some small air gaps between. This will help them to cook faster and absorb the garlic flavour.

    Once you get to the top layer (depending on height and size of your pan), do the same but then top with pieces of sliced butter or margarine. I used about 2 teaspoons worth and spread it throughout the top. Don't worry that is sits on top as a "chunk". It will melt through the potatoes in the oven. Splash a bit of milk on top. (I used less than 1/4 cup total). You truly don't need much. It just adds the necessary moisture while baking and will prevent your dish from becoming too dry. It will also add that little bit of desired creaminess to the potatoes.

    Put the lid on and place in the oven around 400 degrees Farenheight. It should bake for about 45 mins to an hour. (If you over-filled your pot, like I did, you may need a drip tray underneath.. just in case ?) When it is close to being done the potatoes will be soft enough for a fork to go through with very little effort. This is the best time to top with cheese and return to the oven un-covered for another 5 mins or so. Remove from the oven and leave uncovered or partially uncovered to cool while you cook the ribs.

    Maui Ribs take very little time to cook on the BBQ - only about 3 - 5 minutes per side at 400 degrees Farenheight. You will want your potatoes to be nearly done when you begin to cook the Maui Ribs, otherwise, the ribs will be cold or over-cooked. While the potatoes are baking, it is also a great time to prep a salad or dessert.

    Remove Ribs from packaging - ideally they will be at room temperature. Pat them dry with paper towel. Sprinkle a pinch of salt on your Maui Ribs and add pepper, if desired. Cover in a thin layer of your favorite BBQ sauce (or marinate them ahead of time - we have a different recipe for that!). Place on the grill for 3 - 5 minutes per side. You should only need to flip them once. They cook pretty quickly, so make sure you don't walk away.

    Finish up by grilling a few slices of pineapple and be sure to not move them once they hit the grill. That way you get the nice grill lines that make you look like an expert! Once you can see the grill lines forming, flip and grill the other side. Remove them and use as an edible garnish for your table.
